Each of our units are built to your specifications. These packages are shown as an example for reference. Any equipment can be changed or deleted to suite your needs.
We consider a Professional unit to be:
- Series III, IV and V trailers.
- Simple shaped top signs not back-lit.
- Double fold awnings.
- Overhead shelves.
- Nice graphics but no neon.
The unit shown is a very good example of the a Waymatic Professional Pizza Unit. Pizza units can be fresh dough or frozen dough units. There are separate considerations on each. Typically on a fresh dough unit you will need space for a good sized mixer. |

| All units will need a triple sink system with a separate hand sink. Some states require a stainless steel divider to be installed between the hand sink and the triple sinks. We encourage you to obtain the code specifications from your local health department before ordering your trailer. This unit has the triple sink area underneath a fold down counter for more prep space. |

It is essential to show your product in a pizza unit. This unit has a thermal shelf installed on the counter top along with heat lamps installed into the stainless storage shelf above.
Pizza units can have either single or double stacked convection ovens or conveyor ovens. Convection ovens can cook up to (8) pizzas at once, depending on the size of the pizza, with a typical bake time of 12 to 15 minutes. Double stacked conveyor ovens can cook two pizzas at once typically in 8 minutes. |
| Most pizza units will have a prep-top refrigeration table installed. This unit has has been built into the actual stainless counter for a more streamlined look and work flow. Prep-top refrigeration units come in many sizes and all have refrigerated storage on the bottom and refrigerated compartments on top for cheese and other items. |

Freezers are required for a frozen dough pizza operation. There are many freezer models to choose from, in most cases the 23 cubic foot unit is used. |
| Drink systems are installed with outside acces to the Bag-n-box system. There are many options when it comes to drink systems, however; in most cases, the post mix fountain system is the most profitable by volume. |
